1 butternut squash
1 finely sliced shallot
2 tablespoons melted butter
2 tablespoons honey
1 pound greens
Point Reyes blue cheese (or other crumbly blue cheese)
Heat the oven to 400 degrees. Trim and peel squash and cut in to a 1/2 inch dice. Toss squash with shallots, melted butter and honey. Season with salt and pepper. Spread on an oiled baking pan and roast 20 to 30 minutes until nicely browned. Cool to room temperature. Trim and clean greens or use pre trimmed and washed greens. Toss with dressing.
