I love cooking with cheese as much as I love eating it as part of a cheese course. In fact, I can't imagine a meal without it. It's one of those ingredients that can add flavor and texture to a recipe and make it go from ho-hum to decadent for breakfast, lunch or dinner. I'm often asked what my favorite recipe with cheese is and to be honest, it's a toss-up between a great grilled cheese sandwich and homemade mac and cheese using a blend of Gruyere, Comte and Beaufort.
