Chef's Choice: Get the most out of your slow cookerPublished 10/15/08
"Just use your slow cooker!" is a phrase I've head more times recently than I ever thought possible. Our beautiful baby boy was born two weeks ago. Though he has a sweet and serene personality, his birth has brought absolute chaos to what we thought was a somewhat orderly existence. We are now challenged with simply waking up in the morning; forget about cleaning the house, running errands or getting a proper, balanced meal on the table three times each day. Tired conversations with my mother, godmother, aunt, sisters and friends all referred back to the ease and convenience of using a slow cooker. |

We use our slow cooker all the time. Tough cuts of beef turn out wonderfully when they are cooked for 8 or more hours. We like to put a pound or more of a beef roast in our crockpot after coating the meat with a mix of flour and dry vegetable or dry onion soup and then browning the meat in bacon grease. We deglaze with balsamic vinegar and wine and pour that into the crock-pot together with a can of condensed mushroom soup. Add a cup or two of stock and cook on low for 8 hours and you have a meal made in heaven.
